Herbs de Provence Parmesan Baked Fish

Herbs de Provence Parmesan Baked Fish is an easy and savory baked fish recipe. When paired with a side of wild rice,  you have a meal right out of the northern wilds of Minnesota, Ontario or wherever wild rice is found and common on restaurant menus with fish dishes. What makes this recipe extra delicious is the use of Herbs de Provence which is used throughout France in savory dishes as well as using Parmesan cheese to add a nice crust. This combination makes for what might become one your go-to, easy baked fish recipes.

Ingredients:
2 Medium Onions Sliced ½-inch Thick
2 Large Tomatoes Sliced ½-inch Thick
Olive Oil
Sea Salt and Fresh Ground Black Pepper
1 Teaspoon Dried Thyme
4 Cod, Halibut or Other White Fish Fillets
2 Teaspoons Dried Herbs De Provence
½ Cup Freshly Grated Parmesan Cheese

Directions:
Preheat your oven to 375 degrees. Line a large baking dishes with parchment paper. Place the sliced onions and tomatoes on one side of the sheet, and the fish filets on the other side, keeping the separate. Drizzle a bit of the olive oil over the vegetables. Sprinkle with the thyme and salt and pepper to taste. Sprinkle each fish fillet with a salt and pepper to taste. Spread the Herbs de Provence and grated cheese equally over the fish filets.

Bake until the fish is flaky and the vegetables are fork tender, or about 20-25 minutes. Serve with wild rice or rice pilaf for a wonderful dinner.
