Chile Glazed Sweet Potato Wedges

Chile Glazed Sweet Potato Wedges are a sweet and spicy side dish. The chile glaze compliments the natural sweetness of the sweet potatoes. We use our New Mexico Medium Red Chile Powder for the seasoning. It has a smooth flavor and medium heat.

Serve the Sweet Potato Wedges as an appetizer, or side dish. They pair up perfectly with burgers, ribs, roasted or BBQ chicken and so many more dishes. We’re sure you’ll figure out other dishes to serve them with.

Serves: 4

Ingredients:
1 ½ Pounds (2 to 3 Medium) Sweet Potatoes
3 Tablespoons Olive Oil
2 Teaspoons New Mexico Medium Red Chile Powder
2 Tablespoons White Sugar
1 Teaspoon Kosher Flake Salt
½ Teaspoon Freshly Ground Pepper

Directions:
Preheat oven to 425ºF. Set rack in middle position. Cut each potato lengthwise into 6 wedges. Don’t peel them.

Place potato wedges, oil, New Mexico Red Chile Powder, sugar, salt and pepper in a large zip storage bag. Gently toss the wedges in the bag to evenly coat them.

Line a large rimmed baking sheet with parchment paper. Transfer the potato wedges to the baking sheet, skin side down.

Roast potatoes about 20 to 25 minutes until fork tender. Check after 20 minutes so they don’t overcook and burn. Adjust salt and pepper if needed. If you like spicier, you can even sprinkle a bit more chile powder on them. Enjoy!
