Saucy Onion Pork Chops

Saucy Onion Pork Chops are an easy and delicious dish fit for a Sunday dinner. Using our Poultry Seasoning which has a touch of sage, give the chops a very savory flavor. Center cut chops are quite lean, so the seasoning makes the difference in the flavor. The sliced onions along with the deglazed brown bits makes a delicious sauce. All you need is a couple side dishes like a rice, potato or squash, plus a seasonal vegetable, and you have a dinner your guests will enjoy. Be ready for compliments and requests for you to make it again soon.

Serves 4

Ingredients:
4 Large or 6 Medium Center Cut Boneless Pork Chops, about ¾” thick
2 Tablespoons Sheffield’s Poultry Seasoning
2 Teaspoons Kosher Flake Salt
2 Teaspoons Freshly Ground Black Pepper
3 Tablespoons Olive Oil
1 Tablespoon Butter
1 Large Onion, Sliced into Rings about a ¼” Thick
4 Cloves Garlic, Minced Medium
2 Tablespoons Flour
2 Cups Chicken Broth
¼ Cup Low-fat Sour Cream
½ Cup Water

Directions:
Trim off any excess fat from the pork chops. Sprinkle both sides evenly with the Poultry Seasoning, Kosher flake salt and black pepper. Pat in a bit so it sticks better.

Add the 3 of the olive oil tablespoons to a large skillet. Heat over medium-high heat, and when the oil starts to shimmer, carefully add the pork chops. Cook for 4 minutes, turn over and cook another 4 minutes. They should be nicely browned on both sides and cooked thoroughly but not dried out. Don’t let them burn. Transfer them to a plate and lightly cover with foil to keep warm.

Reduce the heat to medium and add the butter. Once melted, add the sliced onions. Add a pinch of salt and cook about 10 until caramelized. Turn frequently so they don’t burn. Add the garlic, and stir in for half a minute. Sprinkle on the flour, stir to combine well, and cook for a minute.

Add the chicken broth to the skillet. Raise the heat to bring to a boil while stirring. Using a wooden or other spatula, scrape up any browned bits. Pour back in any juices from the plate. Add the sour cream and stir until combined. Add the water, stir in and reduce heat to rolling simmer. Cook about 15 minutes until the sauce is reduce and thickened to a sauce consistency.

Transfer the pork chops back into the skillet. Spoon the sauce over the chops. Cook another 10 or so minutes until heated throughout.

Serve with some onion gravy on each chop. Add a seasonal vegetable, and a rice or potato side dish and you have a dinner your guests will talk about…and ask for the recipe. Please enjoy!
