Honey Ancho Glazed Chicken

Our Honey Ancho Glazed Chicken is very easy dish, with a sweet and slightly spicy Honey Ancho Sauce. Ancho Chile Powder is a mild chile pepper, so your non-spicy guests will love it as well. It’s a dish you can make pretty fast, which is perfect when you don’t have a lot of time to cook dinner.

The flavor allows you to finish it with the side dishes of your choice. We like to serve it with a rice dish and a green vegetable. But, since it does have a Southwest honey ancho sauce, you can serve it with Southwest rice and even our Pintos with Poblano Chiles. You can also shred the chicken, and serve in flour or corn tortillas with the sauce poured over the chicken like quick street tacos. Any way you serve it, the Honey Ancho Sauce makes the dish. Enjoy!

Serves 4

Ingredients:
4 Medium Boneless Skinless Chicken Breasts, or 2 Large Chicken Breasts
2 Teaspoons Kosher Flake Salt
2 Teaspoons Freshly Ground Black Pepper
2 Teaspoons Granulated Garlic
2 Teaspoons Granulated Onion
2 Tablespoons Olive Oil
½ Cup Honey
3 Tablespoons Ancho Chile Powder

Directions:
Pound the chicken breasts to about ½” thickness. It you are using larger breasts, cut in half like cutlets, then pound flatter. Season both sides of the chicken pieces with the salt, black pepper, garlic and onion.

In a small pan, add the honey and ancho chile powder. Combine well with a spoon. Set aside until needed.

Heat the oil or butter in a large non-stick skillet over medium-high heat. Once the oil starts to shimmer, or the butter melts, transfer the chicken to the skillet. Cook for 3 minutes to a golden brown, then turn over and cook another 3 minutes until golden brown on the second side. Cover with a lid, turn the heat off, and let steam another 3 minutes to let the chicken finish cooking.

Heat the honey ancho mixture in the pan over medium heat for a minute or so until the honey is melted a bit. It should be warm with a medium sauce consistency.

Place one or two chicken breast pieces on a plate. Spoon the warm honey ancho sauce over the chicken. Serve with a rice or potato side dish and a seasonal vegetable of your choice to complete your meal.
