Gumbo File Powder
Gumbo File Powder, also known as File Gumbo Powder or File Powder has been used in Creole kitchens in Louisiana from the colonial days. Traced back to the Choctaw Native Americans, it has been used as a thickener for Creole stews, Gumbos and other regional dishes such as Jambalaya.
File is made from dried sassafras leaves which are then ground. It is added to the stews to thicken them. It is added once the dish is all cooked and removed from the heat. The File Powder will thicken the dish and be ready to serve. Your recipe will tell you how and when to add it and how much to use.
