Guajillo Chile Powder
Guajillo Chile Powder or Ground Guajillo Chile is also known as the Mirasol Chile Pepper. It is one of the most commonly grown and used chile peppers in Mexico. Whether used whole or ground, it is very versatile and widely used in Mexican, Southwest and South American cuisines. It is also one of three chile peppers referred to as The Holy Trinity in Mexican cooking. The other two being the Ancho and either the Pasilla or Mulato, depending on who is writing the article or cookbook. They complement each other with various levels of sweetness, heat and flavors. They are also commonly used together in sauces for a level of complexity.
From the Spanish word for Little Gourd, the Guajillo Chile Pepper has a mild to medium heat rating of around 2,500 to 8,000 on the Scoville Heat Units scale, or about a 3 on a scale from 1-10. As with all chile peppers, the heat can vary considerably from harvest to harvest, depending on the weather for the year. The taste has a sweet, fruitiness, which adds a wonderful flavor to your recipe.
Guajillo Chile can be used wherever you use other chile powders. It is used to make salsas, sauces and moles. You can also add it to softened butter and used on steaks, chicken, pork chops, shrimp or other meats and seafood as a topping while cooking or when served.
Use the powder as a rub and in marinades. It also adds a great flavor to soup and stews and while braising meats.
