Birdseye Chile Powder
Birdseye Chili Powder, is ground from the African Birdseye, also known as the Piri Piri pepper. While not the hottest chile pepper, is near the top of the Scoville Heat (SHU) scale at 100,000-225,000. Due to their potent heat levels many of these African chiles are harvested and processed for commercial use as a pepper extract. It is also common for Birdseye Chile Powder to be sold as a super hot cayenne chile powder. Birdseye Chiles are generally used more for providing heat to a dish and not flavor.
These peppers and powder are commonly used to make Piri Piri Sauce, which is used in the Portuguese chicken dish Piri Piri. The Birdseye Chile is also used to make Harissa and Harissa Paste, which is sometimes described as “Tunisia’s main condiment”, even “the national condiment of Tunisia”, or at least as “the hallmark of Tunisia’s fish and meat dishes”. In Tunisia, harissa is used as an ingredient in a meat or fish stew with vegetables, and as a flavoring for couscous.
